   Emulsions are frothy mixtures of oil and water. If there's more oil than water, the water droplets become surrounded and separated by oil. Scientists can use these droplets to run millions of tiny experiments in parallel; each droplet can be filled with a different (perhaps random) collection of molecules, whose behaviors can then be observed.
